Don’t we all love something cold, fresh, and boozy during the summer months?
And while there’s nothing like a refreshing cocktail (like this Limoncello Aperol spritz), why not take it to the next level and make a batch of homemade, boozy popsicles?
Enter the Mexican Mule Popsicle. It’s a fun twist on the classic Moscow Mule, and it’s sure to spice up your summer.
Each portion packs plenty of zesty flavors and a nice kick of spice from the ginger beer. Plus a decent hit of alcohol from the tequila!

This recipe is enough for about 10-12 popsicles, depending on the size of your molds.
- Ginger Beer
- Limeade
- Tequila
- Lime Juice
- Popsicle Sticks
- Sea Salt (for serving)
How to Make Mexican Mule Boozy Popsicles:
- In a large pitcher, mix the ginger beer gently with the limeade, tequila, lime juice, and zest (if using).
- Carefully pour the mixture into the popsicle molds and add the popsicle sticks.
- Freeze for 6 hours or overnight.
- Sprinkle with sea salt to serve, and enjoy!
The Best Tequila for Homemade Popsicles
The best tequila for these boozy Mexican Mule popsicles depends on your taste and budget.
But in general, I always recommend good-quality tequila that you actually enjoy. As in, something you like in a margarita or on the rocks - not something that’ll make you cough.
After all, the tequila is super prominent in this recipe, so you want every bite or lick to be tasty.
Here are some suggestions:
Blanco Tequila, aka Silver or White Tequila - This stuff is unaged, clean, and crisp, so it’ll give you a nice bite without a funny aftertaste. I like Espolon since it’s smooth, widely available, and affordable.
Reposado Tequila - This type of tequila is aged in oak barrels for a couple of years, so it’s super smooth and has a wonderful oaky aroma. Go for Cazadores Reposado or Herradura Reposado.
Añejo Tequila - Another aged tequila, this one takes it a step further in terms of its smooth taste and complexity, thanks to its three years in a barrel! I recommend Don Julio Añejo if you want a really premium popsicle.
Although Añejo tequila is one of my faves, and some of the best (in my opinion), I usually go for blanco or reposado tequila when making cocktails and popsicles.
The reason is: they’re cheaper, and you’re “muddying” the flavor with other ingredients. So you don’t need the best of the best.
More Boozy Popsicles To Try
The best thing about homemade popsicles is how easy they are to modify. So if you don’t like tequila or find lime too tart, try one of these recipe variations:
(Note: Feel free to adjust the alcohol content based on your preference and to ensure the popsicles freeze properly. Too much alcohol can prevent them from fully solidifying.)
1. Mojito Popsicles - Swap the ginger beer for club soda, use fresh lime juice instead of limeade, and add white rum over tequila. You’ll also want to add a handful of fresh mint leaves for that signature mojito flavor.
2. Sangria Popsicles - Substitute the ginger beer and limeade for a mix of red wine and orange juice. Then, swap the tequila for brandy and add a variety of diced fruits like apples, strawberries, and peaches.
3. Piña Colada Popsicles - Replace the ginger beer with pineapple juice and the limeade with coconut milk. Add shredded coconut for texture.
4. Margarita Popsicles - Just replace the ginger beer with a bit more lime juice and a splash of orange liqueur.
5. Strawberry Daiquiri Popsicles - Swap out the ginger beer for club soda or water, and use fresh or frozen strawberries instead of limeade. They’ll need to be pureed. Finally, use white rum instead of tequila.
6. Bellini Popsicles - Replace the ginger beer and limeade with peach puree, and use Prosecco instead of the tequila. I also prefer this with lemon juice instead of lime.
